True Ceylon Cinnamon From Sri Lanka

Ceylon Cinnamon is different. Its flavor profile is deep and rich, but also has a lightness and freshness to it that you do not find in other cinnamons. 

This true Cinnamon has a slightly milder taste when compared to the other cinnamon and it’s this refined flavor that allows for more subtle and bright notes such as citrus to shine through. Many may not realize, however the cinnamon generally sold in stores is not true Ceylon Cinnamon at all.

Ceylon Cinnamon comes from the bark of the Cinnamomum Zeylanicum tree, which is native to Sri Lanka. The name is derived from Sri Lanka’s former name, Ceylon. 

Don’t be fooled by imposters.  Common cinnamon, called Cassia, which comes from Indonesia or China has deeper color properties and potently strong and hot aromas. Additionally, Ceylon Cinnamon is known to have multiple health benefits in contrast when compared to Cassia Cinnamon which can cause liver damage if used in excess amount.

When buying in stick form, be sure to look for the thinner, fibrous paper looking layers of Ceylon Cinnamon, not the single layered roll that is characteristic of Cassia.
