Thought to be the most expensive spice in the world, Saffron is truly a delicacy. 

While the price per gram may be high, don’t be fooled. The product is light and just a small amount goes a long way. In fact, the higher quality of Saffron, the less you will need to use.  

Saffron is the stamen on the saffron crocus flower each flower producing only three saffron threads. The flowers only bloom for one week a year and are picked by hand.

Saffron is most commonly produced in Spain and is commonly found in Spanish cuisine but when looking to quality, the best Saffron comes from the fields of Iran. Sargol Saffron is rare and extremely difficult to find, but its color, quality, and flavor properties are uncomparable. For reasons of embargo, direct importation from Iran is prohibited, and therefore the very same Sargol Saffron is currently grown and imported from Afghanistan. 

The highest quality Spanish Saffron must have a minimum coloring strength of 190 (Spanish Rating: Coupe). Iranian Saffron has coloring strength of a minimum of 230 giving you bigger flavors and brighter colors when added to food. Keep these facts in mind when making your Saffron selections.
