Provence. The South of France. This well known region of France is famous for its local produce and its endless purple fields of Lavender. Lavender, a flowering plant from the mint family, is best known for its beautiful color and its calming and intoxicating scent. 

Lavender has been used for over 3,000 years with documentation of its use dating back to the Egyptians and Phoenicians in Mesopotamia.

The reach of the Roman Empire was incredible, with some ruins still found today across France. This reach was what led to the spread of Lavender across Europe and specifically to Provence, France. Today, Provence is the largest lavender producing region in the world.

Originally, Lavender was used for its antiseptic nature, its healing qualities, and its ability to deter insects! In fact, the word “lavender” comes from the Latin word, “lavare,” meaning to wash.

Though it is not well known, Lavender can be eaten and has incredible internal healing properties. It can help relieve indigestion, headaches, and sore throats. While it does have a strong floral scent, when used in smaller amounts, it adds a unique floral touch to recipes.
