New Year Breakfast Scramble

 

So this may not be the most inventive recipe ever, but it's a fantastic go-to when you are hungry in the morning. It's hearty, it will fill you up, it will keep you warm, and best of all, it will send you into the New Year on a good note. Even more, this whole thing can feed six people in a little over 15 minutes. 

Ingredients

2 tbsp. olive oil, divided

4 eggs, beaten

4 slices of bacon

1 large yellow onion, diced

3/4 cup green pepper, diced

1 large brown potato, diced

4 tbsp. butter

1/3 cup cheddar cheese

1 tbsp. flat leaf parsley, chopped

salt and pepper to taste

 

Directions

  1. Heat 1 tbsp. of olive oil in large skillet over medium heat. Add the eggs and scramble until lightly firm. Remove from pan and set aside.

  2. Add remaining 1 tbsp. olive oil to the pan, then add the bacon and cook until crispy. Remove and set aside. Reserve the oil in the skillet.

  3. To the large skillet, add the onions and green pepper. Let cook until tender, about 8 minutes.

  4. Meanwhile, place the diced potatoes in a microwave safe bowl with a 1/4 cup of water. Cover with plastic wrap and microwave for four minutes until the potatoes are fork tender. Drain.

  5. When the onions and green pepper are cooked, add the butter to the skillet and let melt.

  6. Raise the heat to high and gently mix in the potatoes.

  7. Press the potatoes into a single layer in the skillet, season with salt and pepper, and let the potatoes cook until they begin to form a crispy layer on the bottom, about three minutes.

  8. Gently scrape the potatoes up with a spatula and flip so that the potatoes cook the other side. Let cook for three minutes again.

  9. Meanwhile, chop the bacon and break up the scrambled eggs into bite sized pieces.

  10. Add the bacon, eggs, cheddar cheese, and parsley to the skillet, just on top of the potatoes.

  11. Allow the cheese to melt for a minute or two, then stir to combine everything. Serve hot!
