Fish Escabeche Style

So you can find endless varieties of fish just about anywhere across the globe, but one of our favorites are fish from the coast Florida. Our blend brings local Carribbean attributes and freshness to these hearty, meaty and tasty ocean treats! 

 

Ingredients

6 fish fillets

1 tbsp. + 1/4 cup olive oil

2 tbsp. fresh lemon juice

2 tsp. MarnaMaria Florida Fish blend

salt and pepper to taste

 

Directions

  1. Preheat grill or pan to medium high heat.

  2. Brush each fillet using the 1 tbsp. of olive oil and season lightly with salt and pepper.

  3. Place each fillet skin side down on the grill or pan and let cook for 5 - 7 minutes until the fillets are opaque and the fish removes easily from the grill grates or pan.

  4. Meanwhile, in a small bowl, combine the remaining 1/4 cup of olive oil, lemon juice and MarnaMaria Florida Fish blend.

  5. After removing the fish from the heat, gently brush with the prepared marinade.

  6. Serve immediately.

This technique of cooking fish is called escabèche and is typically used in Southern France, Spain and Portugal. It is an herb and acid based marinade added after the fish is cooked. This brings big, clean flavors that have not been changed by cooking heat and also keeps the fish texture firm and crisp.

But does it really?  While we do love ourselves a good white with a nice piece of fish, there are some excellent red options as well. But first the white.

Always the classic combination, fish and white wine, there is not much that is more refreshing than the sea and a crisp, cool white. We love a Chardonnay, either oaked or unoaked according to your preference, a white Bordeaux or an Italian Vermentino. 

When you move to a heartier fish, the wine options really open up. Varieties such as Marlin, Swordfish, Mahi Mahi and Tuna are almost meaty and truly can stand up to some gentle tannins and fruit flavors. We suggest a cool Beaujolais, a light Pinot Noir or a Grenache/Syrah blend.
