Roast Leg of Lamb with Juniper & Rosemary
Lamb doesn't need to be complicated. Let good seasonings and a good oven temperature do the trick. This flavorful leg of lamb is simple to make with big flavors. Make this on a weeknight or for a special occasion. It is soon become a favorite and a go to recipe for you!
Ingredients
3 garlic cloves, finely chopped
1/2 tsp. kosher salt
1 tbsp. fresh rosemary, minced
1 tsp. black pepper
4 - 5 MarnaMaria Juniper Berries, crushed and finely chopped
1 tbsp. olive oil
1 whole leg of lamb, 6 - 7 lbs (at room temperature)
1 cup dry white wine
Directions
Preheat the oven to 450ºF.
On a cutting board, combine the garlic and salt and continue to mince and flatten using the back of the knife to make a smooth paste.
In a small bowl, mix the garlic, rosemary, pepper and MarnaMaria Juniper Berries together with the olive oil.
Rub the mixture all over the lamb and let rest with the seasoning for 15 - 30 minutes.
Cover with foil and place the lamb into a roasting pan and roast for 45 mins or until the internal temperature register 145ºF.
Turn off oven, remove the lamb, and add white wine to roasting pan.
Recover tightly with foil and place back in cooling oven to rest for 20 minutes or until ready to serve, leaving the door fully open to prevent overcooking.
Slice the lamb and serve warm with its juices as a sauce.
