Key Lime Sugar Cookies
I first had these cookies in college and have yet find anything close! These tiny key limes pack a delicious tart punch and when added to soft sugar cookies rolled in coarse sugar, you have a winning combination. A must try!
Ingredients
1 cup butter
1 1/2 cup granulated sugar
1 egg
1 tsp. vanilla extract
3 tbsp. key lime juice
zest of 2-3 key limes
3 cups all purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 cup course sugar
Directions
Preheat oven to 350ºF.
Beat butter and sugar on high for three minutes in an electric mixer until light and fluffy.
Meanwhile, in a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
Add the egg, vanilla, key lime juice, and lime zest.
Gradually add the flour mixuture, 1/2 cup at a time, until combined.
If the dough is soft, refrigerate for 15 minutes.
Using an ice cream scoop, scoop out 2 tbsp cookies and roll in coarse sugar.
Bake for 14 minutes.
Makes 45 cookies
